Avocado Tomato Salsa

This fresh and healthy Avocado Tomato Salsa recipe is easy to prepare and great for dunking tortilla chips in! Marinate overnight and you'll be in flavour town!

Ingredients:

  • 1 Roma tomato
  • 1 Medium or 2 small avocado
  • 1 Can of white corn
  • 1 Can of black beans, drained and rinsed
  • 1 Tbsp. Dried cilantro
  • 1/4 Cup Italian salad dressing
  • 1/2 Medium red onion
  • Juice of one lime

Directions:

Chop tomato and onion and transfer to a large bowl. Drain the can of corn and the black beans. Rinse the black beans and add the corn and beans to the bowl with the tomato and onion. Add the dried cilantro, lime juice and Italian dressing. Stir, cover with saran wrap and allow to marinate. For best results allow the salad to marinate over night. Serve with tortilla chips.
