Coconut Date Walnut Energy Balls

These yummy energy balls are high in fibre from the oats and have healthy fats from the walnuts and coconut oil. A perfect grab and go snack to curb your sweet treat craving! They are also gluten-free, dairy-free, and vegan.

Ingredients

  •  1 ½ cups dates, softened, chopped
  • ½ cup coconut oil
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 2 cups rolled oats
  • ½ cup shredded coconut
  • ½ cup chopped walnuts

Instructions

  1. In a large bowl combine the softened dates, coconut oil, vanilla extract, and salt. Mix on low speed until combined.
  2. Add the oats, shredded coconut, and chopped walnuts to the large bowl. Combine with a large spoon.
  3. Form into 2” balls and place on a baking sheet.
  4. Freeze for 2 hours. Enjoy!
