Coconut Date Walnut Energy Balls
Ingredients
- 1 ½ cups dates, softened, chopped
- ½ cup coconut oil
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 2 cups rolled oats
- ½ cup shredded coconut
- ½ cup chopped walnuts
Instructions
- In a large bowl combine the softened dates, coconut oil, vanilla extract, and salt. Mix on low speed until combined.
- Add the oats, shredded coconut, and chopped walnuts to the large bowl. Combine with a large spoon.
- Form into 2” balls and place on a baking sheet.
- Freeze for 2 hours. Enjoy!
