Edamame & Ginger Thai Dressing
You won't even know you're sneaking in some extra protein in this dressing with the edamame, which creates a beautiful green colour! This creamy dressing adds some zing to any salad. Can also be used to marinate your favourite meat or fish.
Prep time: 5 minutes
Makes 6-8 servings
Ingredients
- 1/3 cup olive oil
- 3 cloves garlic, peeled
- 3 tablespoons soy sauce
- 2 tablespoons water
- 2 tablespoons white distilled vinegar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 tablespoon grated fresh ginger
- a squeeze of lime juice
- ½ cup frozen shelled edamame
Simple Coleslaw
- Ready-made coleslaw mix
- Raw or toasted whole cashews (optional)
- Fresh cilantro (optional)
Instructions
Combine all ingredients into a blender or food processor and blend until smooth.
If preparing dressing for a salad, combine coleslaw mix, cashews with dressing and toss to coat. Garnish with fresh cilantro if desired.
Also pairs well as a marinade with any fish (or chicken) dish such as our baked salmon with roasted veggies.
