Lemon Vanilla Bean Pudding

The perfect mix between tangy citrus and sweet creamy vanilla bean yogurt. This pudding is simple to make and makes a high protein, more health conscious dessert choice!

Ingredients

  •  750g Vanilla Bean Greek Yogurt (5% M.F Liberte Vanilla Bean works well)
  • 250g lemon curd (PC Black Label is a good brand)
  • The zest of one lemon

Instructions

  1. In a medium sized bowl fold the lemon curd into the Vanilla Bean Greek Yogurt
  2. Add the lemon zest and stir well to combine. Enjoy immediately as is, over fresh fruit, or with granola.
