Recipe makes 4-6 Servings
Ingredients:
Salad:
- 3 cups broccoli florets
- 1 cup halved cherry tomatoes
- 1 cup cooked lentils
- ½ cup finely chopped red onion
- ½ cup sliced toasted almonds (reserve some for garnish)
Dressing:
- ¼ cup greek yogurt
- ¼ cup mayonnaise
- 2 tsp whole grain mustard
- 2 tsp honey
- 1 tsp white wine vinegar
- ¼ tsp ground turmeric
- 1 tsp Ras El Hanout Spice Blend (North African Seasoning).
- Salt and pepper, to taste
Instructions:
- Whisk dressing ingredients together in a small bowl. Season with salt and pepper and reserve.
- Combine salad ingredients together. Pour reserved dressing over the dry salad ingredients, season with salt and pepper, and garnish with toasted almond
