Banana Pancakes

Made with just 3 ingredients they are a great way to use up your ripe bananas! Top them with some yogurt and you have a breakfast with 3 of the 4 food groups! They are also a great gluten free option that the entire family can enjoy!

Made with just 3 ingredients they are a great way to use up your ripe bananas! Top them with some yogurt and you have a breakfast with 3 of the 4 food groups! They are also a great gluten free option that the entire family can enjoy!

Ingredients:

  • 1 ripe banana
  • 1/8 tsp baking powder
  • 1 egg

Instructions:

  1. Mash the banana with a fork in a small bowl. Add in the baking powder and stir. Add the egg and whisk.
  2.  Preheat a medium sized frying pan. Spray with oil to prevent sticking. Pour 1/3-1/2 of the mixture in the pan. These work best if you cook only one at a time. Use a very flat spatula to flip once golden.
  3. Top with fresh, frozen or cooked fruit and yogurt and serve!

Tip from dietitian, Lisa Bos:
My favorite way to serve these is with cooked fruit! As the pancakes are cooking, I like to take a handful of frozen raspberries and heat them in a small pot. No sugar added! By the time the pancakes are done, the fruit is also ready to go! I love how the tart raspberries compliment the sweetness of the banana.
