Meal prep in a pinch?
Tip: Costco sells large fresh salmon fillets. One large fillet can typically be cut into 10-12 individual servings. You can double or triple the marinade, depending on how many individual salmon portions you cut up, and then freeze individual salmon portions for busy weeknights!
Total prep time: 10-15 minutes
Ingredients
6-8 salmon fillets (3-4 oz each)
1/3 cup sesame oil
3 tbsp brown sugar
1/4 cup low-sodium teriyaki sauce (or soya sauce)
2 tbsp grated fresh ginger (tip: used jarred minced ginger to save time!)
Instructions
Mix the marinade ingredients and add salmon fillets.
Put in the fridge covered 1 hour (or even better, overnight)
Place in shallow baking dish and discard the remaining marinade. If batch prepping, place salmon fillets in ziploc bags for freezing.
Broil @ 400 C for 10-13 minutes.
For a balanced, complete meal, serve with a whole grain (e.g. quinoa, brown rice) and 1-2 veggies.
