Breakfast Veggie Frittata

Many individuals are pressed for time before work, which can make eating a healthy breakfast difficult. Breakfast foods can easily become routine; perhaps you opt for the same cereal every morning, or a slice of toast with peanut butter. While those options can be healthy choices, they can get boring rather fast, and there are so many breakfast options that are quick, simple, and delicious! Today we will be sharing with you a breakfast veggie frittata recipe that you can easily whip up before conquering a busy day.

Prep Time: 10-15 minutes 

Cook Time: 30 minutes

Makes 4 servings  

Ingredients

  • 8 eggs 

  • 2 cups spinach 

  • ½ of a pepper (any color will do) seeded, and cut into small pieces 

  • 1/3 cup milk 

  • ½ small onion (red or white) thinly sliced 

  • 4 ounces feta 

  • 2 tbsp olive oil 

  • ½ tsp salt

  • ¼ tsp pepper          

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mix the eggs together with the milk, salt, and pepper.

  3. In a skillet on medium heat, sauté the pepper and onion until soft (about 7 minutes). Add the spinach and sauté until wilted (about 2 minutes).

  4. Add the egg mixture on top of the vegetables and crumble feta on top. Cook the entire mixture until the eggs are set around the edges. 

  5. Place the skillet in the oven and bake the frittata until almost set in the centre (around 15 minutes).

  6. Let frittata sit 5 minutes before serving. Enjoy!
