These Pumpkin Spice Oatmeal Bars are sure to do the trick! Something about a warm baked good in the fall is just so comforting, but I try to reach for something that will help me stay satisfied as well. These oat bars don’t only pack a fibre punch, but they are loaded with micronutrients from the star ingredient; Pumpkin! Pumpkin is an excellent source of vitamins A and C, as well as potassium. These bars have all of the delicious flavours of the season, making them a go-to for this time of the year.
Recipe makes x 9 squares

Cook time: 25 minutes
Recipe Ingredients
3 cups rolled oats
1 tsp baking powder
1 tsp pumpkin pie spice
1 tsp ground cinnamon
1 tbsp instant espresso powder
1 cup canned pure pumpkin (not pumpkin pie filling)
1 egg
⅓ cup canola oil
⅓ cup maple syrup
⅓ cup packed brown sugar
1 tsp vanilla extract
Recipe Directions
Preheat the oven to 350 degrees F. Line a square baking dish with parchment paper and set aside (if doubling the recipe, use a 9x13 baking pan as seen in the photos).
In a food processor or blender, pulse the oats until about three-quarters of the way ground into a flour (you still want to see some whole oats). In a large bowl, combine the oats, baking powder, seasonings and espresso powder. Set aside.
In a separate bowl, combine the wet ingredients. Combine the wet with the dry ingredients until a thick batter forms.
Spread evenly into your prepared baking dish. Bake until the edges are slightly brown and the middle is set but not firm, about 25 minutes. Try to avoid overbaking these bars.
