This chicken stir-fry with flavourful Thai-inspired peanut sauce is a great dinner or meal prep recipe that comes together in less than 30 minutes. Here at Craving Health, we love stir-frys because they are a great way to get lots of nutritious veggies (aka. Fibre!) into your meal! They are also super versatile, and can easily be adjusted based on your preferences and what ingredients you have available.

Recipe Ingredients
For the stir-fry:
2 chicken breasts
2 cups of your favourite vegetables, such as carrot, broccoli, bell pepper
1 cup frozen edamame
Rice or noodles, for serving
For the sauce:
2 tbsp peanut butter
2 tbsp low-sodium soy sauce
½ lime, juiced
1 tsp rice wine vinegar
1 tsp honey
Minced garlic
Minced ginger
Water to thin
Recipe Directions
Dice the chicken breasts into small pieces. Season to your preference. We like to use our marinade for Mango Curry Chicken (the flavours go very well with this dish). Set aside.
Prepare your vegetables so they are similar size to the chicken. Set aside.
Combine all the sauce ingredients in a bowl and mix to combine. Add small amounts of water to thin out the sauce if needed. Set aside.
In a large skillet over medium heat with about 1 tbsp neutral oil, sauté the chicken until fully cooked and golden brown on the outside. Add vegetables and edamame, and sauté for 2 minutes with the chicken. Add a small splash of water and allow to evaporate. Continue to sauté until the vegetables/edamame are tender.
Add the peanut sauce to pan and combine with stir-fry. Allow to cook for about 1 minute until the sauce becomes warmed through.
Serve over rice or noodles. Enjoy!
