Looking for a new plant-based alternative to liven up your usual meals?
These crispy lentil fritters are a quick and delicious way to include more plant-based protein in your diet, without things feeling too repetitive. Not only can these be used in so many different ways, they are also extremely nutritious! Lentils are super high in fibre, plant-based protein, micronutrients, such as iron, and plant compounds called phytochemicals that are found to lower your risk for type 2 diabetes and heart disease. Substitute meat for these crispy fritters in any recipe - salads, wraps, sandwiches or even just with your favourite whole grain and vegetable!

Recipe Ingredients
1 cup lentils (any variety), prepare according to package directions. Alternatively, you can use canned lentils which are already cooked - just be sure to drain and rinse them. Please note: you can freeze leftover lentils.
1 medium potato, grated (leave peel on for extra fibre)
2 small carrots, grated
1 small onion, grated
1-2 garlic cloves, minced
1 egg
6 tbsp flour of your choice
Salt, pepper and seasonings of your choice (Ex. garlic powder, paprika, onion powder)
Recipe Directions
Add all ingredients in a bowl and mix until well combined.
Cover a baking sheet with foil and spray with cooking spray. Scoop ¼-cup size measuring cup and scoop mixture onto baking pan. Slightly flatten the top.
Bake at 375 degrees F for about 15 minutes, or until golden brown and crispy.
