Mediterranean Power Bowl Recipe

Look no further. This Mediterranean Power Bowl features vibrant colours, delicious flavours and nutrient-rich ingredients! Every power bowl should combine the following components: complex carbohydrate + protein (ideally a combination of lean meat and plant-based protein) + a variety of vegetables for vitamins/minerals + a delicious sauce! This power bowl combines brown rice, chicken, our Crispy Lentil Fritters, your favourite Greek salad veggies and a delicious Creamy Dill Sauce for a delicious and nutritious recipe that is sure to keep you feeling satisfied.

RECIPE INGREDIENTS

1 ½ cups cooked brown rice

1 chicken breast or 8 chicken tenders, seasoned, cooked (baked, grilled, air-fried, etc.) and diced

4 Crispy Lentil Fritters

4 tbsp Creamy Dill Dip 

2 handfuls baby spinach 

Your favourite Greek salad toppings: diced cucumbers, tomato, onion, crumbled feta, olives, etc.

RECIPE DIRECTIONS

  1. Divide your cooked rice, chicken and lentil fritters between 2 bowls. 

  2. Add your spinach and prepared vegetables to your preference. Add a dollop of creamy dill dip. 

  3. If you’re meal prepping this recipe, keep your veggies and dill dip separate from the rest of your bowl for optimum freshness!

Tip:

Many of these ingredients can be prepped ahead and put together for a quick meal during the week!
