Creamy goat cheese, sweet orange and warm shrimp make for a flavorful, satisfying salad!

Recipe makes 4 servings

Ingredients

Salad:

  • 5 cups spinach
  • 1 red pepper, sliced
  • 1 orange, wedged
  • 24 shrimp, warmed (you can saute lightly in a pan with some butter or oil, steam, or microwave them)
  • 1 cup toasted pecans (cook for 3 minutes in 1 tbsp maple syrup)
  • 1/4 cup goats cheese, balled or crumbled

Dressing:

  • 1 cup orange juice
  • 1 tbsp soy sauce (sodium reduced)
  • 2 tsp maple syrup

Instructions

  1. For dressing: whisk together orange juice, soy sauce, and maple syrup until thoroughly combined. Be ready to use immediately.

  2. Place spinach in a large bow (or separate containers if preparing for lunches ahead of time).

  3. Layer red pepper, orange wedges, shrimp, pecans, and goat cheese over bed of spinach.

  4. Drizzle dressing over salad (reserve to the side if consuming later). Toss, and enjoy!
