Bocconcini translates to “little bites” in Italian. They are semi-soft balls of mozzarella cheese, about the size of eggs. They can typically be found at the deli section of your local grocery store.
Total prep time: 15 minutes
Serves: 6-8
Ingredients:
1 small container baby spinach + arugula
2 cups mixed berries, sliced
1 container bocconcini cheese, sliced
½ cup raw or roasted pumpkin seeds, unsalted
1-2 avocados, sliced (optional)
Instructions
The best way to create this salad is with layers to make sure you get a combination of the all the ingredients in each bite. Aim to create two layers.
Layer 1: baby spinach + arugula
Layer 2: berries
Layer 3: bocconcini
Layer 4: pumpkin seeds
Layer 5: avocados (if using)
Refrigerate for at least 2 hours or overnight and serve.
