End of Summer Greek Salad

Crunchy bell peppers, juicy tomatoes, succulent corn and salty feta cheese…what’s not to love about this Greek salad? It’s the perfect meal to cap off a great summer. Drizzle it with our Zesty Greek Vinaigrette and you’re set!

Total prep time: 15 minutes

Serves: 6-8


Ingredients:

  • 1 pint cherry tomatoes, sliced

  • 3 sweet bell peppers (1 yellow, 1 red, 1 orange), diced

  • A few fresh basil leaves (finely sliced)

  • 3 green onions, sliced

  • 1 can corn

  • 1 English cucumber, diced

  • 400-600 g feta cheese (I recommend Apetina – best brand of feta I’ve ever tried. 1 container = 200g so use 2-3 containers depending on how much you love feta!)

 

Instructions

  1. Combine all ingredients in a large bowl, toss, and serve with our Zesty Greek Vinaigrette

  2. Serve and enjoy!
